We don’t follow the traditional wine tasting format where you are either offered wines from a limited menu or have to choose between a few pre-built flights. With 40 different wines to choose from, our self-guided tastings offer unbeatable flexibility. How is this possible? Our entrepreneurial spirit drove us to be the first place in the Finger Lakes to revolutionize wine tastings through high-tech self-service wine dispensers. But don’t worry, you are not going to be alone. Our menus will offer you guidance on what’s currently available. Moreover, the FLX Families’ Book will introduce you to the families behind these amazing products. Our knowledgeable staff is always around and available to answer questions and tell you more about any and every wine, winery, their philosophy and unforgettable tall family stories. Reservations are not available for these wine tastings. Indoor and outdoor seating is available on a first come-first served basis.
Flights & Bites, Food and Wine Pairing Experience

Our signature Food & Wine Pairing Tasting Experiences around curated themes. Led by a WSET-certified Sommelier, these tastings take a deep-dive into a variety of themes and showcase some rare, highly-allocated, hard-to-find wines. Each of the 5 wines are paired with seasonally inspired bites showcasing local ingredients. All bites are made by different local chefs, illustrating diverse culinary philosophies and styles. The pairings are thought-provoking, pushing boundaries to what’s possible in the world of food and wine pairing.

In-Depth Guided Tasting Experiences
Range from 30min to 2hrs | Starting at $35pp plus tax & gratuity
Here at Once, we want to provide a tasting experience that appeals to a diverse array of interests. From short & interactive themed deep-dives, to crash courses to explore the region from different angles, through once in a lifetime seminars. Do you need some inspiration? What about going back in time with Sommelier Laura Winter Falk to explore the History of the Finger Lakes in 6 Glasses? Or if you want to polish your wine tasting skills maybe you’ll want to join CWJ Tito and Learn How to Taste Like a Wine Judge. Learn about and taste a wide array of Sparkling Wines and Ciders in our Crash Sparkling Tasting, which’ll give you access to hard-to-find examples otherwise not available for tasting. Other Crash Tasting Experiences include the popular Trailblazers and the timeless Classics. In the first one you’ll enter the world of new grape varieties and trending winemaking techniques. While in the latter you’ll redefine and reimagine what’s possible with top-notch classic styles.
These are just some examples, but there’s always new tasting experiences being offered on a regular basis. Regardless of the style or theme, all experiences are led by WSET and/or Sommelier certified wine professionals.

Stay For a Snack & a Glass of Wine
We’re more than just a wine tasting room. All of the wines you taste are also available by the glass, and are best enjoyed on the deck with scenic lake views and good company. If you’re feeling snacky, pair your wine with small bites from our seasonal menu or a variety of charcuterie boards stacked with meats, cheeses, and preserves from local producers.
